Halloween Tea Brack

Ingredients


225g self raising flour
375g fruit mix ( sultanas etc )
300ml cold tea
125g caster sugar
1 egg beaten
A pinch of mixed spice

Method


Soak fruit mix in tea overnight
Sieve flour into mix and add sugar, spice and egg mix all this together with a whisk
Wrap ring or coin or some charm or other in parchment paper and add to mix
Transfer to a greased tin either 8” round or 2lb loaf tin
Bake in a pre heated oven for 1 hour at 170 c / 325f/ gas 3 for approx 1 hour until
it has risen and is firm to touch
Cool on a wire tray, when cooled wrap in parchment and keep for 2 days
before cutting

Vinnies top tip

Brush some warmed golden syrup over brack before serving to give it a moist glaze



Colcannon style Boxty


100g Kale ( boil as you would cabbage in lightly salted water, drain and chopped)
250g grated potato
250g plain flour
2 eggs
Pinch of salt
Oil for frying

Place all ingredients in a bowl and mix well, heat your oil in a pan and drop spoonfuls onto the pan fry until golden brown on each side. Serve hot
